Mini Mushroom, Beef and Feta Frittatas


I'm approaching the end of a beautiful relationship, the end of the dreadful phase I of the South Beach diet. I must say I can't really call it dreadful anymore, I've quite gotten used to it by now. I have 2 days left and then I can start making small changes. So after 12 days here's what I think so far of this diet. I lost a lot of weight in the first 5 days of the diet and then the weight loss sort of stopped. I haven't changed how I eat, stuck to the plan, never cheated once, only had nuts for snack and mostly had salads and meat, not a single drop of sugar. So why then have I stopped losing? Not sure but I haven't given up yet. The purpose of phase I of the South Beach diet is supposedly to kill your cravings and to get a start on your weight loss. The way I see it it's supposed to be like a motivational phase, you see a huge weight loss so it will motivate you to continue with it. Did my cravings go away? Two Ingredient Sugar Free Orange Jello Yogurt Parfait


I finished 8 days on phase I, 6 days to go and surprisingly it's getting easier. The biggest change I notice is my appetite, and how it's not what it used to be. Thank God for small miracles, actually that's a pretty big miracle if you ask me. Although earlier today we went to the Christmas market and there was fudge, there were candied nuts, and popcorn, and chocolate, lots of chocolate, pies and cakes, everything that I'm not supposed to have. But I persevered, and did not buy anything of that sort! The old me would have bought a few of everything, but not the new me! One small step for man, one huge step for Joanna, this ain't no baby step! However, no diet is complete without a dessert, that's just how I feel. So I went and bought the The South Beach Diet Quick and Easy Cookbook and immediately went to the dessert section, desperately looking for a dessert recipe that's suitable for Phase I of the South Beach diet. Frittata with Chicken and Feta Cheese


Happy Friday! The weekend couldn't come any sooner! It's been a crazy week and now I am officially on day 7 of this dreadful Phase I  of South Beach. So here's how I feel after almost a week. I've shed some weight, I am not as hungry as I usually am, and I hope my hunger doesn't come back cause I'm loving it this way, I miss sinking my teeth into a nice piece of bread, I miss my fruits, but most of all I miss chocolate. Oh how I miss chocolate! I can't stand the taste of meat anymore, the only pleasure I get is from snacking on cashews every once in a while, can't overdo this either. I miss oatmeal for breakfast and my cherry yogurt. I love how I feel, I don't feel bloated anymore, I don't get hives on my face from chocolate anymore and I love this frittata for breakfast. I think that about says it all for now. I'm sure I'll have more to tell you after the two weeks are up. Speaking of this frittata, I made this on Monday and I've had a piece for breakfast every day. Are you doing this with me? Cause if you're not, drop what you're doing and let's get started! So the weirdest thing happened to me today. I was not hungry! Pretty much for the entire day! Go figure, I don't think those words existed in my vocabulary until today, but it happened. Now I don't know why, maybe it's all the protein I've been having but I'm sure not going to complain about it! I woke up this morning a bit late, 8 o'clock, yes that's late for me, but by the time I putzed around and went downstairs it was after 10 o'clock. Needless to say my poor husband, who is trying his darnedest to support me and do this diet with me, was starving and just like the dog was sticking around the kitchen hoping I'd make something to eat. Almond Crusted Pork Chops with Mustard Sauce


I survived Day 1 of Phase I of the South Beach Diet. I hope I can survive another 13 days. What can I say? I love my carbs, I love the smell of hot bread, I love sugar in my coffee, I love chocolate, oh how I love chocolate. I must snap out of it! This can't be good for me. I have to think pure, get all the bad foods out of my mind, but oh how good they are, makes me drool just thinking about them! Enough! Ok I'll tell you how I did on day 1. Not bad, drank lots of water, stuck to the diet, didn't cheat once. God bless my husband who is so supportive he is doing this with me. If he's cheating at least I don't know that, but he's eating everything I cook and not once has he said he's missed bread. Was I hungry? Not really, if I felt hunger, I would snack on some cashews and drink lots of water. That's another one of my struggles, water! Balance! Balance is what I strive for in my diet. God knows I'm not one that has good balance in my diet, but I strive for it. Balance and moderation. Sounds so simple, doesn't it? Well if it were simple, I wouldn't be starting this blog and I wouldn't be on a diet! I keep saying I don't want to call this a diet. But what is a diet? In nutrition, diet is the sum of food consumed by a person or other organism. By definition alone we cannot avoid being on a diet as long as we need to eat to survive. So call it what you may, but it is a diet. All my life I've tried so many different diets, I think this is how diet became a dirty word. I'd lose weight, gain weight, lose weight, you know the usual yo-yo dieter. But you know what I say? Never give up, never surrender. So now I decided to try the South Beach diet.
