Roasted Green Beans and Mushrooms


Balance! Balance is what I strive for in my diet.

God knows I’m not one that has good balance in my diet, but I strive for it. Balance and moderation. Sounds so simple, doesn’t it? Well if it were simple, I wouldn’t be starting this blog and I wouldn’t be on a diet!

I keep saying I don’t want to call this a diet. But what is a diet?

In nutrition, diet is the sum of food consumed by a person or other organism.

By definition alone we cannot avoid being on a diet as long as we need to eat to survive. So call it what you may, but it is a diet.

All my life I’ve tried so many different diets, I think this is how diet became a dirty word. I’d lose weight, gain weight, lose weight, you know the usual yo-yo dieter. But you know what I say? Never give up, never surrender.

So now I decided to try the South Beach diet. I’ve been doing lots of reading on it and it sounds pretty good. I’m starting Phase I and this phase is supposed to last only 2 weeks. Although many say South Beach Diet is similar to the Atkins diet, they differ a bit. On the South Beach diet you can have good carbs, and I’m a carb lover, so this is why this diet sounded great to me.


On phase 1 however, no carbs allowed, no sugar allowed, but luckily it’s only 2 weeks. I keep saying to myself I can do anything for 2 weeks and I believe I can, as long as I plan meals and know what I’ll be eating for the entire week, otherwise it’s all down hill.

My friends, or I hope that you’ll become my friends seeing that this is my first blog post, this here recipe is fabulous. It’s a side dish, so I’d eat this with chicken or fish or something, but if you’re hungry and need a snack, this would be perfect. I loved this, the string beans were somewhat nutty in flavor and there’s nothing I love more than roasted mushrooms, they are crazy good. Ok fine, maybe I would like a piece of cake, better than this, but that’s not the point, the point is to learn to love this food and stop craving the bad food.

Repeat after me, cake bad, roasted green beans with mushrooms good. I think we understand each other.

Roasted Green Beans and Mushrooms

Yield: 4 servings

Roasted Green Beans and Mushrooms


  • 1/2 lb green beans, ends trimmed
  • 2 cups chopped crimini mushrooms
  • 1 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • salt and pepper to taste


  1. Preheat oven to 450 F degrees.
  2. Toss all the ingredients together and spread them over a large cookie sheet.
  3. Bake for 20 minutes.


This recipe is perfect for South Beach Diet Phase I, II, III.

    This is in the oven right now!! I made a crockpot chicken and potatoes and am excited to try these green beans! My hubby loves balsamic vinaigrette so I think this will be perfect. :)

    This is my kind of side dish!! It looks delicious!

    Good luck with South Beach. I was really successful on it years ago and pretty much created a lifestyle from it.
